EARL "SMOKEY" DAWSON
Earl grew up watching his grandfather tend a brick pit in the backyard of their central Texas home. No thermometer — just feel. No timer — just patience. That's where Earl learned that BBQ isn't a recipe. It's a rhythm.
After 20 years in construction, Earl took a leap of faith. He bought a custom offset smoker, entered every competition he could, and spent two years perfecting his craft. In 2012, Ridgefire Smokehouse opened its doors.
"People ask me what makes our brisket different," Earl says, leaning against his smoker. "I tell 'em: 14 hours. Post oak. And love. That's it. That's the whole secret."

The Spark
Earl Dawson enters his first BBQ competition with a borrowed smoker. Takes home 3rd place brisket.
The Pop-Up
Weekend pop-up smokehouse in a parking lot. Word spreads fast. Lines form by 10am.
Ridgefire Opens
The brick-and-mortar opens on Smoke Ridge Road. One smoker, three picnic tables, and a dream.
Catering Launch
Catering operations begin. First year: 150 events from weddings to corporate lunches.
Sauce Line
Signature sauces launch online. Original Smoke sells 10,000 bottles in the first year.
The Expansion
Second pit added. Capacity doubles. Named one of Texas's Top 10 BBQ joints by Texas Monthly.

OUR PHILOSOPHY
At Ridgefire, we believe great BBQ comes from respecting three things: the animal, the wood, and the time.
We source our beef from local ranches. We burn only post oak — the same wood that's been used in Texas pits for over a century. And we never rush the smoke.
Every morning at 4am, the fire is lit. By 5pm, the brisket has had its full 14 hours. We serve until it's gone. When it sells out, that's it for the day. No exceptions.
